Business

  • My brother and I have always shared a passion for food. At 16 and 18, we identified an opportunity at a local brewery that was looking for a dedicated food partner, which became the catalyst for turning that passion into a business.

  • In 2019, we built our first small food truck, handling everything from the physical build to branding, menu development, and operations.

  • Six years later, the business has grown from a single food truck into three mobile units and a permanent restaurant built inside a custom shipping container. We now operate past six-figure annual sales, release new menu items weekly, and maintain a full merchandise line designed in-house. The focus remains on thoughtful design, quality food, and creating experiences people remember.

Building and growing this business taught me how to take an idea from concept to a sustainable operation. Through hands-on experience, I learned how branding, design, and physical execution work together to shape how a business is perceived and remembered. From building the trucks and restaurant to developing merchandise, menus, and customer touchpoints, I gained a deep understanding of how thoughtful design supports real business growth. Just as importantly, the experience emphasized the value of relationships, working with suppliers, venues, and customers; showing me how strong connections and consistency are essential to long-term success.

Our Story

This is me on the right and my brother Dove on the left. I was 15 and he was 17 when we started this, with almost no real understanding of food service or how to run a business. What we did understand was how much we loved pizza nights with our family and the feeling of bringing people together around food.
When our family got a pizza oven, something clicked. We started experimenting, making pizzas for friends, and slowly putting the idea out into the community to see how people would react. The support was immediate and unexpected, and after just one month of opening, we knew this was something we wanted to take seriously.
Looking back now, that decision started a six year journey filled with long nights, mistakes, growth, and a lot of learning along the way. If you want to see how it all unfolded, keep scrolling!

2019 to 2023

This was the first mobile food truck we built, marking the beginning of our journey in the food business. It was originally set up and operated outside of a local brewery, allowing us to test our concept, build a customer base, and refine our offerings. That location eventually became our permanent home, making this truck an important foundation for where the business is today..

After a year and a half of operating, we decided to remodel the setup to better serve wedding venues and private events. However, due to COVID-19, many of the events we had planned were cancelled, forcing us to adapt and rethink our approach moving forward.
In 2023, we built our first permanent location. This marked a major turning point for the brand, strengthening our presence and helping us grow both our customer base and our following on social media.

2023 First Merch Drop

This merch launch was a huge success, I designed custom hats and shirts, with both stock selling out within the first month of having them. This really helped boost our social media and made us look like an actual brand beyond just food.

2024 - Container Restaurant

We saw growth in the previous years but realized it was finally time to upgrade our exsisting restaurant and kitchen with something bigger and better. We ordered a 40 foot shipping container and i designed and rebuilt it from the ground up over the span of three months.  
This was by far the most time consuming and frustrating thing i've had to create. Not only was it the biggest project, but also because we had to find material, get building code passes, food safety passes, fire passes, and make everything look great for the customers. We are currently using this and always adding improvements!

  • Our merchandise line includes tote bags, hats, shirts, and keychains, designed to extend the brand beyond food.

2025 - Catering Cart

We had an opportunity to begin doing catering for weddings this year in collaboration with the brewery we're currently stationed at, so we jumped on it. This was built in the summer of 2025 and will be on the road in the srping of 2026!
This mobile catering cart is designed as both a functional workspace and a brand statement. The open structure elevates the cooking surface slightly above eye level, inviting guests to engage with the process while maintaining clear airflow for oven smoke and heat. Galvanized metal and aluminum provide durability and a utilitarian foundation, while birch plywood introduces warmth and a handcrafted feel. By balancing industrial materials with natural finishes, the cart creates a distinctive visual identity that draws people in and ensures the experience is remembered as much for the design as for the food itself.

2026

2026 has a lot in store for us. Whether we’re on the road for weddings, fairs, and private events, or continuing to upgrade and refine our base location, we’re excited to see how this next chapter unfolds. Our long-term vision is to grow this into a small chain, while staying true to what made it special in the first place. Building this business has been one of the biggest accomplishments of my life, and I’m excited to see where the future takes it.
